Sausage and Peppers Sandwiches (Gluten free option, Dairy free option, Nut free, Soy free)

These sausage and peppers sandwiches are a super delicious and easy weeknight meal. They’re almost like a leveled up meatball sub, with extra veggies and yummy melted parmesan. Get dinner on the table quickly with a meal the whole family will love. Check out the recipe below for the easy details and instructions.

Let the sandwich making begin!

The steps:

  • You start this recipe by browning the sausage in a pan. I’ve used several different types of sausage links. My favorite ones are the Teton Waters Ranch beef sausages, but I also like kielbasa or andouille sausage links.
  • Next, you’ll add the bell peppers and onion and cook until the peppers are just fork tender.
  • While the sausage and peppers are cooking, you prep and toast your bread. You can use either homemade or store bought hoagie buns (GF if needed).
  • You’re going to lay the buns open-faced on a parchment lined sheet pan. Then, you’ll butter the inside of the top half of the bun, then sprinkle a generous helping of parmesan cheese, and then add a pinch of dried parsley flakes on the cheese.
  • This pan is going to go into the oven and broil on the LOW setting for 3-5 minutes. You want the bread to start to brown and the cheese melted. Check it often to make sure it’s not burning.
  • Once the bell peppers are cooked, pour your jar of pasta sauce into the pan of sausage and veggies. Stir and cook just until the pasta sauce is hot.
  • When the bread is done, remove the pan from the oven, then spoon some of the sausage and veggie mixture onto the inside bottom half of each bun. Close the sandwiches and serve. It’s a quick and easy meal. Enjoy!

Substitutions:

  • Choose your favorite sausage links for this recipe. I’ve used beef, pork, and chicken sausages, and they have all turned out great.
  • You can use mozzarella cheese in place of the parmesan if that’s what you have. It will have a little bit of a different flavor, but will still be great.
  • You can use dairy free butter, or skip the butter if you need to make this dairy free. You will also need to use a dairy free cheese, or skip that as well.
  • I like to bake, so I made my hoagie buns using this recipe from Amber’s Kitchen and it’s fantastic. You can use store bought buns or make your own. There are lots of options and recipes for gluten free buns out there too!
  • The pasta sauce you use it up to you. Feel free to add some dashes of spices if your sauce needs more flavor. Sometimes I’ll add garlic powder and Italian seasoning to mine.
  • You can make this with any variety of bell pepper, and can throw in some other veggies you may have in the fridge.

Recommended kitchen items:

  • Unbleached parchment paper sheets. I have these in a drawer, and love that I can pull one out when I need it. I also love that these sheets are unbleached.
  • Teak wood spoon. This set is beautiful. I love using wooden utensils, because they don’t scratch your pots and pans and they feel so homey.
  • 12in Cast iron skillet. These are so versatile. They can go from the stovetop to the oven and are one of the cleanest cooking pans out there. I don’t have a link to the exact one I have, but linked is a very similar one.

Sausage and Peppers Sandwiches

Ingredients
  

  • 2 Tbsp olive oil
  • 12 oz sausage links- kielbasa, andouille, chicken sausage, etc. sliced in rounds
  • 1 green pepper seeded and sliced
  • 1 orange or red bell pepper seeded and sliced
  • ½ yellow onion sliced
  • 24 oz pasta sauce
  • 8 hoagie buns homemade or storebought
  • butter for spreading on bread
  • parmesan cheese for sprinkling on bread
  • dried parsley flakes for sprinkling on cheese

Instructions
 

  • Heat a large skillet over medium high heat and add the olive oil.
  • Add the sliced sausage rounds and stir and cook until the sausage starts to brown.
  • Mix the sliced bell peppers and onion into the pan and stir and cook until the peppers become fork tender, but still have a little bite to them. This will be about 5-7 minutes.
  • While the peppers are cooking, lay your hoagie buns open faced on a sheet pan. Spread the top inside with butter, sprinkle a generous amount of parmesan cheese on the butter, and then sprinkle some parsley flakes on the cheese.
  • Put the pan with the bread in the oven and broil on the LOW setting for about 3-5 minutes, or until your bread starts to brown and then cheese melts. Check it carefully because the bread can brown quickly.
  • While the bread is in the oven, add your pasta sauce to your sausage and veggie mixture and stir to combine. Turn the heat off when the pasta sauce is hot.
  • Once your hoagie buns are out of the oven, spoon your sausage and veggie mixture onto the bottom half of each bun, then close each one to make a sandwich. Enjoy!
