Creamy Pumpkin Pasta (Gluten free, Dairy free, Egg free, Nut free, Soy free)

Not only is this Fall/Winter meal delicious and satisfying, but it also uses our favorite ingredient: pumpkin puree. A delicious blend of spices and herbs enhances ground turkey to make a sausage that adds depth and warmth to this pasta. It’s warm, it’s tasty, and it’s very allergy friendly by being gluten, dairy and nut free. Let the pasta making begin!

The steps:

  • Boil your noodles according to the directions on the package. I absolutely love Jovial Foods gluten free brown rice noodles in all its varieties. I use penne noodles for this recipe, but you can use other shapes as well.
  • Mix your ground turkey with the rest of the sausage ingredients and combine it thoroughly. I like to use my hands at the end to really make sure it’s all mixed together.
  • Next, you’re going to cook your sausage in a large skillet on the stove until it’s cooked through and starting to brown.
  • While the sausage is cooking, you will quickly whisk up your sauce in a small mixing bowl.
  • Add the mixed greens to the skillet with the sausage and cook them until they’re wilted.
  • Pour the sauce over the sausage and cook it until you can start to smell the garlic and ginger- which takes about 2-3 minutes.
  • Drain your noodles once they’re done cooking, add them to the skillet, and then stir everything together.
  • That’s it! It’s a really fast and really delicious dinner. Enjoy!

Substitutions:

  • You can use ground pork in place of the ground turkey.
  • Heavy cream can be used in place of the coconut cream.
  • Vegetable broth can be substituted for the chicken bone broth.
  • Your favorite noodle, gluten free or not, can replace the Jovial Foods brown rice penne noodles.

Recommended kitchen items:

  • Stainless steel measuring utensils. The spoons are my favorite, because they fit in spice jars. I also love using stainless steel, instead of plastic.
  • Stainless steel mixing bowls. This set is awesome, because it has a non-slip bottom and lids for each bowl.
  • Garlic press. Oh man, I love this thing. No more fiddling with garlic cloves, you just smash them instead.
  • Teak wood spoon. This set is beautiful. I love using wooden utensils, because they don’t scratch your pots and pans and they feel so homey.
  • 12in Cast iron skillet. These are so versatile. They can go from the stovetop to the oven and are one of the cleanest cooking pans out there. I don’t have a link to the exact one I have, but linked is a very similar one.

Creamy Pumpkin Pasta

Ingredients
  

Sausage

  • 1 lb ground turkey
  • ⅓ cup yellow onion diced small (about 1/2 an onion)
  • 1½ tsp sea salt
  • ½ tsp fresh cracked pepper
  • 1 tsp garlic powder
  • 1 tsp dried sage
  • ½ tsp dried thyme
  • ⅛ tsp cayenne pepper

Pumpkin Sauce

  • 1 cup pumpkin puree
  • ¾ cup coconut cream (or coconut milk)
  • ¾ cup chicken bone broth
  • 2 cloves garlic minced
  • 1 Tbsp ginger finely grated (or ½ tsp dried)
  • ¼ tsp sea salt or to taste
  • ⅛ tsp fresh cracked pepper

Other

  • 2 Tbsp extra virgin olive oil for coating the pan
  • 2 cups mixed greens
  • 12 oz brown rice penne noodles (I love Jovial Foods)

Instructions
 

  • Cook your noodles according to the directions on the package.
  • Make your sausage by thoroughly mixing all of the "Sausage" ingredients in a mixing bowl. It helps to use your hands to ensure the spices have made their way through all the meat.
  • Heat a large skillet over medium high heat, coat it with some olive oil, and then cook the sausage until the turkey is no longer pink and is starting to brown.
  • While the turkey sausage is cooking, add all of your sauce ingredients to a small mixing bowl and whisk until smooth.
  • Add the 2 cups of mixed greens to the pan of sausage, and cook and stir until it's wilted.
  • Pour the sauce over the sausage and cook for 2-3 minutes, or until you start to smell the garlic and ginger. Give it a little taste to see if it needs more salt. Season to taste.
  • When your noodles are done cooking, drain them, and then pour them into the sausage and sauce pan. Stir to combine.
  • Enjoy!
