Power Greens Pesto (AIP, Paleo, Keto, Vegan, Whole30, Dairy free, Gluten free, Nut-free, Soy-free)

Did you know that pesto can be super simple to make? And bonus, you get to be in control of the ingredients. This recipe is very adaptable to what you have on hand. It’s also loaded with power greens, thereby loaded with nutrients. Put it on anything you would put pesto on. Our faves are: pizza, salmon, and toast.

Let the blending begin!

The steps:

  • First, gather all of your ingredients.
  • Then, add them all to a blender or food processor. I like using my mini magic bullet for sauces like this.
  • Blend or process until mostly smooth, but still a little chunky.
  • That’s it!

Substitutions:

  • You can sub super greens, spring mix, or other greens. Kale might make the texture a little different than desired, but swiss chard or watercress would also be good.
  • You can use avocado oil in place of extra virgin olive oil.
  • If you tolerate nuts, pine nuts or cashews would be a good option in place of coconut shreds, which are optional.
  • Nutritional yeast is also optional, but you can also use parmesan cheese in its place if you tolerate dairy.

Power Greens Pesto

Ingredients
  

  • 1 ½ cups basil leaves
  • 2 cups power greens or super greens
  • 2 cloves garlic
  • 1 lemon juiced
  • cup extra virgin olive oil
  • ¼ tsp sea salt
  • 2 Tbsp unsweetened coconut shreds (optional)
  • 1 tsp nutritional yeast (non-fortified)

Instructions
 

  • Add all ingredients to a blender of food processor.
  • Blend until mostly smooth, but still a little chunky.
  • Put on your favorite foods! We love this on salmon, pizza, and toast. Enjoy!
