Let the popcorn making begin!
The steps:
- First, we start by popping our popcorn kernels. If you have a preferred way of doing this, like an air popper or microwave, then go for it. I’ll teach you how I cook my popcorn on the stove top.
- You start by heating a medium saucepan to medium high heat and adding your avocado oil (or coconut oil, or olive oil).
- Once the oil has heated for a minute, tilt your saucepan around so that the oil coats the entire bottom of the pan.
- Sprinkle your popcorn kernels in a single layer on the bottom of your pan and put the lid on the saucepan.
- Leave the pan to heat until you hear the kernels start to pop.
- While the kernels are heating up, make your seasoning by adding the ingredients to a food processor, blender, or mixing bowl. I like to blitz mine for a few seconds, but you don’t have to do this. You can just mix it with a spoon or fork in a mixing bowl.
- Once the kernels start to pop, carefully tilt and shake the pan a couple of times every 30 seconds to 1 minute to keep the unpopped kernels at the bottom. You will need to hold the lid down, so make sure to wear oven mitts.
- The popcorn should fill the saucepan, and once there becomes a few seconds between “pops” turn off the heat and immediately pour your popcorn in a large bowl.
- Drizzle a little more avocado oil over the popcorn and then toss the seasoning into the bowl. Stir or shake it to coat all of the popcorn. Enjoy!

Substitutions:
- I don’t have a dairy free substitution for almond flour, but you can use the grated Parmesan cheese that comes in a shaker bottle, and skip the nutritional yeast.
- The lemon juice is optional in this recipe, it just helps lift the flavor a little bit.
- You can use coconut oil or olive oil to cook the popcorn on the stove top, if you go that route.
- You can substitute melted butter, ghee, or olive oil for drizzling on the popcorn, in place of avocado oil.

Recommended kitchen items:
- Silicone oven mitts. I love using silicone oven mitts, because they totally protect your hands, unlike the fabric ones I’ve used in the past. I use this set daily.
- Food processor. This Hamilton Beach food processor has been so handy to have and has been a power house. It can chop, puree, shred, slice, and crinkle cut.
- Blendtec blender. This is one of my absolute favorite appliances in my kitchen.
- Magic Bullet Mini. This is a great little blender that I use often for sauces, or for a smoothie when I’m out of town.
- Stainless steel mixing bowls. This set is awesome, because it has a non-slip bottoms and lids for each bowl.
- Stainless steel measuring utensils. The spoons are my favorite, because they fit in spice jars. I also love using stainless steel, instead of plastic.

Garlic Herb Popcorn
Ingredients
- 3-4 tbsp avocado oil plus extra for drizzling
- ½ cup popcorn kernels
- ½ cup fine almond flour
- 1 tbsp nutritional yeast
- ¾ tsp salt or more, add to taste
- ¾ tsp garlic powder
- 1 tsp onion powder
- ¾ tsp dried parsley
- ½ tsp dried oregano
- ½ tsp dried basil
- 1 tsp lemon juice (optional)
Instructions
- Start by popping your popcorn kernels. You can do this your preferred way i.e. air popper, stove top, microwave, etc, or I'll explain below how I do it on the stove top.
- Heat a medium saucepan (that has a lid) to medium high heat and add the avocado oil. Once it heats up for a minute, tilt and turn the pan so that the oil spreads evenly on the bottom of the pan.
- Sprinkle the popcorn kernels in a single even layer over the bottom of the pan.
- Cover the saucepan and leave it alone until the kernels start to pop.
- While you're waiting for the kernels to pop, you can get your seasoning ready. Do this by adding all of the seasoning ingredients, from almond flour to lemon juice to a mixing bowl or food processor.
- I like to blitz my mixture in a food processor or blender, but you can just mix it by hand in a bowl. Also, the lemon juice can be optional, but I like the little lift in flavor it gives!
- Once the kernels start to pop, carefully lift and shake the pan (wearing oven mitts and holding the lid down) every 30 seconds to 1 minute to make sure the unpopped kernels stay at the bottom.
- Once the popping has died down and there's a few seconds between each "pop", turn the heat off and immediately transfer the popcorn to a large bowl.
- Drizzle some avocado oil over the popcorn (or melted butter, ghee, olive oil, etc.) and then toss the seasoning in the bowl. Either cover the bowl and shake it to coat the popcorn, or stir it gently with a large spoon or spatula.
- Give it a taste and add more salt, as desired. Enjoy!
