Let the cooking begin!
The steps:
- Add your quinoa, veggies, and some liquid to a pot, boil, and then simmer until the quinoa is cooked.
- The flavorings are then added to the pot after it’s been taken off the heat.
- Now, all you need to do is scoop it into bowls and top with what you like. Avoid nuts if you don’t tolerate them, but fresh fruit like strawberries or blueberries are so good on top. You can also add cacao nibs or coconut whipped cream.
- How easy is that? This is a great dish to prep and have ready in the fridge to heat up in the morning.

Substitutions:
- Your favorite non-dairy or dairy milk can be subbed for coconut milk.
- Honey can be subbed for maple syrup.
- Protein powder is optional. I love this unflavored bone broth protein powder from Paleovalley. If you use a flavored powder, you will most likely need less of something, ie less cacao powder if you’re using chocolate flavored, less or no vanilla extract if it’s vanilla flavored.

Recommended kitchen items:
- Teak wood spoon. This set is beautiful. I love using wooden utensils, because they don’t scratch your pots and pans.
- Stainless steel measuring utensils. The spoons are my favorite, because they fit in spice jars. I also love using stainless steel, instead of plastic.
- Silicone oven mitts. I love using silicone oven mitts, because they totally protect your hands, unlike the fabric ones I’ve used in the past. I use this set daily.

Chocolate Zucchini Quinoa Protein Bowl
(DF, GF, Egg-free, Nut-free, Soy-free, Nightshade-free)
Ingredients
- 1 cup quinoa rinsed
- 1 medium zucchini finely grated
- 1 cup cauliflower rice
- 1 15oz can coconut milk full fat
- ½ cup water
- 1 banana mashed
- 3 Tbsp maple syrup
- 1 Tbsp vanilla extract
- ¼ cup cacao powder
- 1 scoop unflavored bone broth protein powder, collage, or this is optional
- 1 tsp cinnamon
- ¼ tsp sea salt
- Optional toppings: chopped almonds, bittersweet chocolate chunks, blueberries, strawberries, coconut whipped cream, etc.
Instructions
- Add quinoa, zucchini, cauliflower rice, coconut milk, and water to a saucepan and heat to boil.
- Turn the heat down to simmer, cover the pot, and let cook for about 10-15 minutes, or until the quinoa is cooked.
- Remove from heat and add in the mashed bananas, maple syrup, vanilla, cacao powder, protein powder, and cinnamon. Mix until everything is thoroughly combined.
- Serve in bowls with your favorite toppings. Enjoy!
