Sausage With Apple And Sauerkraut Breakfast Skillet (Dairy free, Gluten free, Nut-free, Soy-free, Egg free, Paleo, Whole30)

This has been my favorite breakfast for a while now. It’s tangy, delicious, and filling. Making it can be done in about 10 minutes. You can easily make this dish in large batches to store in the refrigerator to be ready for your busy mornings. Follow the recipe below for this yummy breakfast.

Let’s get cooking!

The steps:

  • First, you’re going to want to prep your food. Start by cutting the sausage into rounds. Then, cube the apple and the zucchini. Done!
  • Heat a skillet over medium-high heat and add the extra virgin olive oil. Once it’s hot, add your sausage and cook it until it starts to brown. This doesn’t take too long, it should be about 2-3 minutes.
  • Next, you’re going to add the diced apple and zucchini to the skillet. Stir everything until it’s well mixed and let it cook for another 2-3 minutes.
  • Add in the mixed greens and stir and cook until the greens start to will.
  • Turn off the heat and sprinkle the salt, pepper, and lemon juice over the food in the pan. Stir it all to coat.
  • Serve on a plate or in a bowl and top with a tablespoon or two of sauerkraut.
  • That’s it! This is a super fast and easy meal, and it’s totally delicious.

Substitutions:

  • You can sub avocado oil, or another cooking oil, for the extra virgin olive oil.
  • I usually use Aidells Chicken Sausages, but you can use other sausages as well.
  • Feel free to use your favorite apple variety. I like Granny Smith, pink lady, honey crisp, or cosmic crisp. I would recommend staying away from red delicious for this dish.
  • Kale, spinach, or just about any other green can be subbed for mixed greens.

Recommended kitchen items:

  • Teak wood spoon. This set is beautiful. I love using wooden utensils, because they don’t scratch your pots and pans.
  • Stainless steel measuring utensils. The spoons are my favorite, because they fit in spice jars. I also love using stainless steel, instead of plastic.
  • Wood salt box. I use this salt box daily, and I love the swivel top and how warm and cute it is.

Ingredients
  

  • 1 Tbsp extra virgin olive oil
  • 6 oz/2 ropes chicken sausage cut into rounds
  • 1 apple (granny smith, honey crisp, etc) cubed
  • 1 cup diced zucchini about 1 small, half medium
  • 1 handful mixed greens
  • sea salt to taste
  • cracked black pepper to taste
  • 1-2 tbsp lemon juice
  • 1-2 tbsp sauerkraut

Instructions
 

  • Heat a large skillet to medium heat, add the oil, and then the sausage pieces. Cook until they start to brown, about 2-3 minutes.
  • Add the apple and zucchini and mix until well combined. Let this cook for another 2-3 minutes.
  • Next, add in the mixed greens and cook until the greens start to wilt (not mushy!), or about 1-2 minutes.
  • Finally, turn off the heat and season the food with salt and pepper and lemon juice. Stir to combine.
  • Serve in a bowl or on a plate and top with a tablespoon or two of sauerkraut. Enjoy!
